Winter months bring snow and magic moments in the kitchen. We bake for family and friends to gather together to feast for the holidays. It is my favorite time to bake goodies with the hot oven keeping my kitchen warm and toasty.
For long days spent skiing in the mountains surrounding Lake Tahoe, nothing tastes better than a hot cup of cocoa; they are legendary together. This mix has a double dose of deep, dark chocolate and rich dutch cocoa, making a creamy, full-bodied hot cocoa that is decadent and satisfying (even for a hardcore dark chocolate lover like me). The beauty of this recipe is that you can add coffee, toffee, marshmallows, liqueurs and flavorings to customize the flavor.

Sealed in a mason jar with a ribbon and directions tag, it makes a unique and thoughtful gift that can be enjoyed at home or taken on ski trips and winter vacations. Enjoy!

- 2cups (210 g) confectioner's sugarpowdered sugar
- 1 1/4cups (150 g) cocoa powderdutch-process, full fat preferred
- 1/2cup (20 g) dark chocolatechopped, 70% preferred *
- 2 1/2cups (350 g) powdered milk
- 1tsp saltsea or kosher *
- 2tsp cornstarch
- Place the powdered sugar, cocoa powder, salt and cornstarch in the bowl of a food processor and pulse 2 - 3 times to combine. Add the chopped chocolate and pulse until powdery, with no visible chocolate pieces remaining.
- If making by hand, grate the chocolate into fine shavings or chop into very fine pieces. Whisk all of the ingredients together until thoroughly combined.
- Add-ins: See notes below
- Place in canning jars and decorate with ribbons and a tag with the preparation directions (below). Can be stored in jars/ airtight container in a cool, dark place for 2-3 months.
- Heat 1 cup of water or milk just to boiling. Place 3-4 tablespoons of the Cocoa Mix in a mug. Pour the hot water/ milk onto the mug, stirring until completely combined. Top with mini marshmallows, if desired.
Add-ins for flavoring -
1/3 cup - toffee bits (add w/ chopped chocolate)
1-2 drops - vanilla extract, mint extract or extract of your choice (add to mug)
Adults only -
1/8 - 1/4 tsp - cayenne pepper (or to taste)
1-2 Tbs - espresso powder (not coffee grounds)
1 cup - coffee, used in place of milk or water in recipe
1/2 - 1 oz - liqueur or to taste
